Hatay Sarma İçi is a traditional dish made by kneading fine bulgur with tomato and pepper paste without adding water, then mixing it with parsley, mint, spring onions, pomegranate molasses, and olive oil. The generous herbs, pomegranate molasses, and olive oil give it a fresh, aromatic, and lightly tangy flavor. Also known as Hatay Kısırı or locally as Nemmuş, Sarma İçi is usually served with lettuce or grape leaves. Its traditional preparation reflects Hatay’s long-established bulgur-based culinary culture.
