Hatay Aşur is a traditional dish prepared by slowly cooking boneless beef or mutton shank with cracked wheat, chickpeas, onions, and pepper paste. The cooked mixture is pounded with a wooden mallet, giving the dish its thick and well-blended texture. Served with hot butter and cumin poured over the top, Aşur is especially prepared for religious holidays and votive occasions. Also known locally as aşir, aşşür, hrisi, or dövme, it reflects Hatay’s long-established culinary heritage.
