Antakya Paper Kebab is a traditional dish from Hatay, prepared by finely chopping beef brisket with peppers, parsley, garlic, and spices using a traditional zırh knife, shaping the mixture into a disc, and baking it on parchment paper. The meat’s natural fat and tenderness give the kebab its rich aroma and juicy texture. Enjoyed in everyday meals as well as at weddings, votive gatherings, and other ceremonies, the dish is also locally known as “lahme la varka.” Its traditional preparation makes it one of Hatay’s most distinctive meat specialties.
