Antakya Bread Oruk is a traditional dish from Hatay prepared by kneading bread, fine bulgur, tomato and pepper paste, and spices together. Shaped into a hollow disc, it is either baked or fried, giving it a browned exterior and a soft interior. Holding an important place in Antakya cuisine, the dish also reflects the local tradition of making full use of bread. Also known locally as “Fış Oruk,” it is one of Hatay’s distinctive regional specialties.
