İskilip Dolma

İskilip Dolma is a traditional dish from Çorum prepared with rice, bone-in beef, butter, onions, and spices. The rice is placed in special cloth bags and slowly cooked together with the meat in a copper cauldron over a wood fire, giving the dish its distinctive flavor. One of the most established dishes of İskilip cuisine, it is especially prepared for weddings and large gatherings. It is traditionally served hot in copper dishes accompanied by a vinegar-based salad.
